  • What services do you offer?
We offer fully-processed beef calves direct-to-consumer in either whole, half, or quarters. We also may offer smaller box bundles at various times throughout the year.
  • What is special about your beef?
Legacy 3 Ranch & Cattle calves are born on-property from our family's herd and meticulously cared for and fed high-quality grass and grains until time of slaughter. We use a grass-fed and grain-finished feeder program to produce high-quality beef; with our program you get the best characteristics of both grass feeding and grain finishing. For example, beef at Legacy 3 Ranch & Cattle is healthier and more flavorful than mass-produced feed-lot beef due to the high-quality grasses used in the feeding program. Our beef is also more marbled and moist than traditional grass-fed cattle due to the additional grains added into the cattle's diet. The result is healthy, flavorful, moist, marbled (but not fatty) beef. Compare this to expensive, healthy and lean grass-fed options, or less expensive, fatty, and flavorless feed-lot beef options. We guarantee you'll taste the difference.
  • Who processes your beef and how is it processed?
The Legacy 3 Ranch & Cattle private label is licensed through the state of Texas and processed by a state-inspected processing facility in Comanche, Texas. All beef products follow strict inspection, processing, safe-handling, and packaging guidelines to ensure quality. Our beef products are custom processed and packaged to-order for each customer. We include 14-days of dry-aging with our beef products which enhances beef flavor and tenderness due to moisture loss and enzymatic breakdown of proteins and connective tissue.
  • What is hanging weight (HWT) and how does it affect price?
Hanging Weight (HWT): This is the weight of the animal carcass after it has been field dressed (head, hide, organs, and entrails removed) but before it has been aged, cut, and packaged. It's the weight used as a standard for calculating the cost of bulk beef purchases, particularly when buying from farmers or ranchers. The final price of a whole cow is determined by calculating (price per pound x hanging weight). Packaged Weight: This is the weight of the beef after it has been cut, trimmed, and packaged into individual cuts (steaks, roasts, ground beef, etc.). Cost Calculation: Hanging weight is often used to determine the price when buying a half or whole beef because it is a standard measurement and more accurate for processing costs than live weight. Yield: The packaged weight is typically around 60-65% of the hanging weight, meaning you'll receive less meat than the hanging weight indicates due to trimming and bone removal.
  • How does your price compare to store bought beef?
A recent customer paid $11.51/LB* for all custom cut packages including 30 pounds of steaks (Sirloin, Tenderloin, Ribeye, NY Strip, and T-Bone). Compare this to store bought steak prices from August 2025 listed below. Store bought steak prices continue to increase year over year compared to our prices, check the links below for current store prices: * This is based off a half-calf order with hanging weight (HWT) of 400 pounds, at a cost of $7.25 per HWT pound. The total price of $2900 = ($7.25 x 400) divided by the resulting 252 LBS of custom packaged beef cost $11.51/LB.
